Grapes: 90% Sangiovese, 5% Canaiolo, 5% Colorino.
Harvest: by hand into crates, starting in the second-third decade of October.
Vinification: destemming, temperature-controlled fermentation, 20-25 days of post-fermentative maceration from the beginning of the fermentation, soft pressing and malolactic fermentation with maturing on fine fermentation lees for approx. 90 days.
Ageing: in Slavonian oak barrels with a capacity of 35 hl, in barriques with a capacity of 225 l and in French oak tonneaux with a capacity of 500 l for about 24-36 months.
Maturing in the bottle: at least 6 months.
Tasting notes: deep ruby red colour with soft garnet hues.
Intense floral bouquet with scents of red fruit and spicy aromas mixed with intense mineral hints. Sweet, mellow taste with a broad structure and velvety tannins. Long, fresh and persistent aftertaste, which leaves intense fruity and spicy sensations in the mouth.
Serving suggestions: suitable for serving with first dishes of meat, red meats and tuscan pecorino cheese.
